3 tbsp unsalted butter

4 cloves garlic, minced

1 tsp fresh rosemary, chopped (or ½ tsp dried)

1 tsp fresh thyme, chopped (or ½ tsp dried)

Salt and black pepper, to taste

1 tbsp olive oil

For the Potatoes:

1 lb (450g) baby potatoes (or fingerlings), halved

2 tbsp olive oil

1 tsp smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 425°F (220°C). In a large bowl, toss the halved baby potatoes with olive oil, smoked paprika, salt, and pepper until well coated. Spread them out on a baking sheet lined with parchment paper.

      Roast the Potatoes:
