2 ribeye steaks (about 1 inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

5 cloves garlic, minced

2 sprigs fresh rosemary or thyme

For the Potatoes:

1 pound baby potatoes, halved

2 tablespoons olive oil

1 teaspoon paprika

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a bowl, combine halved baby potatoes, olive oil, paprika, salt, and pepper. Toss until evenly coated.

        - Spread the potatoes out in a single layer on a baking sheet.

          Roast the Potatoes:

            - Roast the potatoes in the preheated oven for about 25-30 minutes, or until golden brown and fork-tender. Flip halfway through cooking for even browning.

              Season and Sear the Steaks:

                - While the potatoes are roasting, season both sides of the ribeye steaks generously with salt and pepper.
