1 pound large shrimp, peeled and deveined

8 ounces linguine or spaghetti

4 tablespoons unsalted butter

4 tablespoons olive oil

4 cloves garlic, minced

1/4 teaspoon red pepper flakes (adjust for spice level)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

Salt and freshly ground black pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

Freshly grated Parmesan cheese (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of the olive oil and 2 tablespoons of the butter over medium heat. Once melted and hot, add the minced garlic and red pepper flakes, cooking until fragrant (about 30 seconds).

      Add the Shrimp: Add the shrimp to the skillet in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on one side until pink, then flip and cook for an additional 1-2 minutes until fully cooked. Remove the shrimp from the skillet and set aside.

        Create the Sauce: In the same skillet, pour in the white wine and bring to a simmer. Allow it to reduce for about 2-3 minutes. Add the reserved pasta water, lemon juice, and lemon zest. Stir well to combine.

          Combine Everything: Lower the heat, and add the remaining 2 tablespoons of butter. Stir until melted, then add the cooked pasta and shrimp back to the skillet. Toss everything together until well coated. Adjust seasoning with more salt and pepper if necessary.

            Serve: Remove from heat and garnish with fresh parsley. Serve immediately, topped with freshly grated Parmesan cheese if desired.
