1 pound large shrimp (peeled and deveined)

6 tablespoons unsalted butter

4 cloves garlic (minced)

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 tablespoon fresh parsley (chopped)

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

8-10 skewers (if wooden, soaked in water for 30 minutes)

Instructions
 

Prepare the Marinade:

    In a small saucepan, melt the butter over low heat. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant but not browned. Remove from heat and stir in lemon juice, lemon zest, parsley, paprika, salt, and black pepper.

      Marinate the Shrimp:

        Place the cleaned shrimp in a large bowl. Pour half of the garlic butter mixture over the shrimp, reserving the other half for later. Toss to coat the shrimp evenly. Cover and let them marinate in the refrigerator for 15-30 minutes.

          Preheat the Oven:

            Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil for easy cleanup.

              Assemble the Skewers:

                Thread the marinated shrimp onto the skewers, approximately 4-6 shrimp per skewer, depending on their size.

                  Roast the Shrimp:

                    Arrange the skewers on the prepared baking sheet. Brush the remaining garlic butter mixture over the shrimp. Roast in the preheated oven for 6-8 minutes, or until the shrimp are pink and opaque.

                      Serve:

                        Remove the skewers from the oven and let them cool for a minute. Serve hot, garnishing with additional chopped parsley and lemon wedges if desired.
