Ingredients

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions

Prepare the Marinade: In a mixing bowl, whisk together the melted butter, minced garlic, lemon juice, lemon zest, smoked paprika, oregano, salt, and pepper until well combined.

Marinate the Shrimp: Add the peeled and deveined shrimp into the bowl with the marinade. Toss to coat the shrimp evenly. Cover and let marinate in the refrigerator for at least 15-30 minutes to allow the flavors to infuse.

Preheat the Oven: Preheat your oven to 400°F (200°C). If using a grill, preheat to medium-high heat.

Assemble the Skewers: Thread the marinated shrimp onto the skewers. If desired, you can alternate the shrimp with vegetable pieces like bell peppers or zucchini for added color and flavor.

          Roast or Grill:

            - For Oven: Place the skewers on a baking sheet lined with parchment paper. Roast in the oven for about 8-10 minutes or until the shrimp turn pink and opaque, flipping them halfway through for even cooking.

              - For Grill: Grill the skewers for about 2-3 minutes per side, or until the shrimp are cooked through and have a nice char.

Garnish and Serve: Once cooked, remove the skewers from the oven or grill. Sprinkle with chopped fresh parsley and serve immediately with extra lemon wedges on the side.
