Ingredients

4 salmon fillets (about 6 oz each)

1 lb asparagus, trimmed

6 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons lemon juice (freshly squeezed)

1 teaspoon lemon zest

1 teaspoon dried thyme (or 2 teaspoons fresh thyme)

Salt and pepper, to taste

Lemon wedges, for serving

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Asparagus: In a large bowl, toss the trimmed asparagus with 2 tablespoons of olive oil, salt, and pepper. Spread the asparagus evenly on one side of a large baking sheet.

Make the Garlic Butter: In a small saucepan over medium heat, melt 6 tablespoons of butter. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Remove from heat, then stir in the lemon juice, lemon zest, dried thyme, and a pinch of salt and pepper.

Prepare the Salmon: Place the salmon fillets on the other side of the baking sheet (opposite the asparagus). Brush the garlic butter mixture generously over each salmon fillet.

Roast in the Oven: Transfer the baking sheet to the oven and roast for 12-15 minutes, or until the salmon is opaque and flakes easily with a fork, and the asparagus is tender and vibrant green.

Serve: Once done, remove from the oven. Transfer the salmon and asparagus to serving plates. Drizzle any remaining garlic butter from the baking sheet over the salmon fillets. Garnish with fresh parsley and serve with lemon wedges on the side.
