Ingredients

1 pound (450g) fresh mushrooms (cremini or button)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/4 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional)

Instructions

Prepare the Mushrooms: Clean the mushrooms gently with a damp cloth to remove any dirt. If they are large, you can slice them in half or quarters for even cooking.

Heat the Pan: In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until melted and bubbly.

Sauté the Mushrooms: Add the mushrooms to the hot skillet in a single layer (you may need to do this in batches if your skillet is small). Cook them without stirring for about 3-4 minutes, until they are browned on one side.

Add Garlic and Seasoning: Stir the mushrooms and add the minced garlic and thyme. Cook for an additional 2-3 minutes, stirring frequently, until the garlic is fragrant and the mushrooms are tender.

Finish with Butter: Lower the heat to medium-low and add the remaining 2 tablespoons of butter, salt, black pepper, and red pepper flakes (if using). Stir until the butter is melted and coats the mushrooms evenly.

Garnish and Serve: Remove from heat. Sprinkle the garlic butter mushrooms with chopped parsley and lemon zest, if desired. Serve warm as a side dish or on top of toast or pasta.
