12 oz (340g) fettuccine or spaghetti

2 boneless, skinless chicken breasts, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

½ cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

2 cups fresh spinach

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or spaghetti according to package instructions until al dente. Drain, reserving 1 cup of pasta water, and set aside.

    Sauté the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken pieces, season with salt and black pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes (if using). Sauté for about 30 seconds, or until the garlic is fragrant but not browned.

        Deglaze the Pan: Pour the chicken broth into the skillet, scraping up any browned bits from the bottom of the pan. Allow to simmer for 1-2 minutes.

          Create the Sauce: Lower the heat and stir in the heavy cream and half of the Parmesan cheese. Cook, stirring frequently, until the sauce thickens slightly, about 3-4 minutes.

            Combine Ingredients: Add the cooked chicken, halved cherry tomatoes, and spinach to the sauce. Toss everything together until the spinach wilts and the mixture is heated through.

              Add the Pasta: Stir in the cooked pasta, mixing well to coat the noodles in the sauce. If necessary, use the reserved pasta water to thin out the sauce to your desired consistency.

                Finish and Serve: Turn off the heat, taste, and adjust seasoning if needed. Add the remaining Parmesan cheese and toss to combine. Serve hot, garnished with fresh parsley and lemon wedges on the side.
