2 lbs frozen hash browns (thawed)

1 cup sour cream

1 can (10.5 oz) cream of chicken soup (or cream of mushroom for a vegetarian option)

2 cups sharp cheddar cheese (shredded)

1/2 cup onion (finely chopped)

1/4 cup butter (melted)

1 cup corn flakes (crushed)

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1/2 teaspoon salt

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Hash Browns: In a large mixing bowl, combine the thawed hash browns, sour cream, cream of chicken soup, 1 1/2 cups of shredded cheddar cheese, chopped onion, melted butter, garlic powder, black pepper, and salt. Stir until all ingredients are well combined.

      Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, smoothing out the top with a spatula.

        Top with Corn Flakes: In a small bowl, mix the crushed corn flakes with the remaining 1/2 cup of cheddar cheese. Sprinkle this mixture evenly over the hash brown mixture.

          Bake: Place the casserole dish in the preheated oven and bake for 45-55 minutes, or until the top is golden brown and bubbly.

            Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh chives or parsley if desired. Serve warm as a comforting side dish.
