Frozen Strawberry Shortcake Yogurt Pops

Ingredients
  

2 cups fresh strawberries, hulled and roughly chopped

1/4 cup granulated sugar (adjust to taste)

1 teaspoon vanilla extract

2 cups plain Greek yogurt (or vanilla yogurt for added sweetness)

1 cup crushed graham crackers (about 6 full sheets)

2 tablespoons unsalted butter, melted

Pinch of salt

Optional: extra strawberries and whipped cream for garnish

Instructions
 

Prepare the Strawberries:

    - In a medium bowl, combine the chopped strawberries and granulated sugar. Mix well and let sit for about 10-15 minutes until the strawberries release their juices.

      Blend the Strawberry Mixture:

        - Once softened, blend the strawberries in a blender or food processor until they reach a chunky puree. If you prefer a smoother texture, blend longer until it's completely smooth. Set aside.

          Prepare the Graham Cracker Crust:

            - In a separate bowl, mix the crushed graham crackers, melted butter, and a pinch of salt until well combined. The mixture should resemble wet sand.

              Layer the Pops:

                - Get your popsicle molds ready. Start by adding a spoonful of the graham cracker mixture to the bottom of each mold, pressing down gently to create an even layer.

                  Add Yogurt:

                    - Spoon a layer of Greek yogurt over the graham cracker layer, filling each mold about halfway.

                      Add Strawberry Puree:

                        - Add a layer of the strawberry puree on top of the yogurt. Use a skewer or a knife to swirl the strawberry mixture into the yogurt slightly.

                          Top with More Yogurt:

                            - Add another spoonful of yogurt on top of the strawberry layer, filling each mold almost to the top.

                              Finish with Graham Cracker:

                                - Finally, sprinkle the remaining graham cracker mixture on top, gently pushing it down into the yogurt.

                                  Insert Sticks and Freeze:

                                    - Insert wooden popsicle sticks into each mold and place it in the freezer. Freeze for at least 4-6 hours, or until solid.

                                      Unmold and Serve:

                                        - To remove the pops, run warm water over the outside of the molds for a few seconds, then gently pull the pops out. Serve immediately, optionally garnishing with extra strawberries and whipped cream.
