2 cups plain Greek yogurt

1 cup fresh lemon juice (about 4-5 lemons)

Zest of 2 lemons

½ cup honey or maple syrup (adjust for sweetness)

½ cup granulated sugar (optional for extra sweetness)

1 teaspoon vanilla extract

Pinch of salt

Optional toppings: lemon slices, fresh berries, or crushed nuts

Instructions
 

Prepare the Citrus: Start by zesting the lemons and then juicing them. Strain the juice to remove any seeds or pulp for a smooth texture.

    Mix the Ingredients: In a large mixing bowl, combine the Greek yogurt, fresh lemon juice, lemon zest, honey (or maple syrup), granulated sugar (if using), vanilla extract, and a pinch of salt. Whisk everything together until it is completely smooth and well combined.

      Taste and Adjust: Give the mixture a taste and adjust for sweetness if necessary. You can add more honey or sugar if you prefer a sweeter bar.

        Prepare the Pan: Line an 8x8 inch (or similar) square baking dish with parchment paper, allowing the paper to hang over the edges for easy removal later. This will help in lifting the bars out once they are frozen.

          Pour the Mixture: Pour the yogurt mixture into the prepared baking dish, spreading it out evenly with a spatula.

            Freeze: Place the baking dish in the freezer and let it freeze for about 4-6 hours, or until the mixture is completely solid.
