Frozen Blueberry Muffin Bites

Ingredients
  

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup milk (whole or plant-based)

1/3 cup vegetable oil or melted coconut oil

1 large egg

1 teaspoon vanilla extract

1 cup frozen blueberries

Optional: Zest of 1 lemon for added flavor

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Prepare a mini muffin tin by greasing it or lining it with mini muffin cups.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, rolled oats, sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the milk, oil, egg, and vanilla extract until smooth. If you’re using lemon zest, fold it in at this point.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

          Fold in Blueberries: Gently fold in the frozen blueberries until evenly distributed throughout the batter.

            Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.

              Bake: Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                Cool Down: Remove from the oven and allow the muffin bites to cool in the pan for about 5 minutes. Carefully transfer them to a wire rack to cool completely.

                  Freeze: Once cooled, you can freeze the muffin bites by placing them in a single layer on a baking sheet. After they're frozen solid, transfer them to a zip-top freezer bag for easy storage.

                    Enjoy: Take out individual muffin bites as needed, and enjoy them either straight from the freezer or warmed up in the microwave for a delicious breakfast or snack!
