4 large ripe red tomatoes

1 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

2 large eggs

1/4 cup buttermilk (or milk)

Vegetable oil for frying

Fresh herbs (like basil or parsley) for garnish

Instructions
 

Start by washing the tomatoes thoroughly. Slice each tomato into 1/2-inch thick slices and set them aside to drain on a paper towel for about 10 minutes.

    In a shallow bowl, mix the flour, cornmeal, paprika, garlic powder, onion powder, salt, and pepper together.

      In another bowl, whisk together the eggs and buttermilk until well combined.

        Heat about 1/2 inch of vegetable oil in a large skillet or frying pan over medium-high heat.

          Dredge each tomato slice first in the flour mixture, ensuring it is well-coated. Shake off excess flour.

            Next, dip the flour-coated tomato slice into the egg mixture, coating it evenly, and then return it to the flour mixture for a second dredge. This will give your tomatoes extra crispiness.

              Carefully place the coated tomato slices into the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy.

                Once fried, transfer the tomatoes to a plate lined with paper towels to absorb any excess oil.
