Ingredients

1 medium head of green cabbage, shredded

6 slices of thick-cut bacon, chopped

1 large onion, sliced

4 cloves of garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon apple cider vinegar

Salt and black pepper, to taste

2 tablespoons olive oil (optional, for added richness)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, stirring occasionally, about 8-10 minutes. Remove the bacon bits with a slotted spoon and drain on paper towels, leaving the rendered fat in the skillet.

Sauté the Onions: Add the sliced onion to the skillet with the bacon fat. Sauté for about 5 minutes or until the onions are soft and translucent.

Add Garlic and Red Pepper Flakes: Stir in the minced garlic and red pepper flakes to the onions. Sauté for another 1-2 minutes until the garlic becomes fragrant but not burned.

Incorporate Cabbage: Gradually add the shredded cabbage to the skillet, stirring well to combine with the onion and garlic mixture. If using, drizzle with olive oil for added flavor and richness.

Season and Cook: Sprinkle salt and black pepper over the cabbage mixture. Continue to sauté for about 10-15 minutes, stirring occasionally, until the cabbage is tender and slightly caramelized.

Add Bacon & Vinegar: Once the cabbage is cooked down, add the crispy bacon back into the skillet along with the apple cider vinegar. Mix thoroughly and cook for an additional 2 minutes to heat through.

Serve and Enjoy: Transfer the fried cabbage to a serving dish, garnish with chopped parsley, and serve hot as a delicious side dish or even as a light main course.
