6 fresh peaches, peeled, pitted, and sliced

1/2 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 teaspoon lemon juice

1/2 teaspoon ground cinnamon (optional)

For the Cobbler Batter:

1 cup all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 cup whole milk

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

Garnish (optional):

Whipped cream or vanilla ice cream

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peach Filling: In a large mixing bowl, combine the sliced peaches, 1/2 cup sugar, cornstarch, vanilla extract, lemon juice, and cinnamon (if using). Toss gently until the peaches are well coated. Set aside to let the mixture sit for about 10-15 minutes, allowing the flavors to meld.

      Make the Cobbler Batter: In another bowl, whisk together the flour, 1 cup sugar, baking powder, and salt. Add the milk, melted butter, and 1 teaspoon of vanilla extract, stirring until just combined. Be careful not to overmix; it should be lumpy but blended.

        Assemble the Cobbler: Pour the batter into a greased 9x13 inch baking dish. Next, spoon the peach filling evenly over the batter. Do not stir; the batter will rise up around the peaches while baking.
