French Onion Potato Bake

4 large russet potatoes, thinly sliced

2 large yellow onions, thinly sliced

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon dried thyme

1 cup beef broth (or vegetable broth)

½ cup heavy cream

1 cup grated Gruyère cheese

1 cup grated mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the sliced onions, salt, and pepper. Cook, stirring frequently, until the onions are caramelized, about 20-25 minutes. Reduce heat if necessary to avoid burning.

      Once the onions are caramelized, add the thyme and beef broth to the skillet, stirring well to combine. Let it simmer for about 5 minutes until slightly reduced.

        In a large mixing bowl, combine the heavy cream, Gruyère cheese, and mozzarella cheese. Stir well to incorporate.

          Grease a 9x13 inch baking dish. Layer half of the sliced potatoes at the bottom, followed by half of the caramelized onion mixture. Pour half of the cheese mixture over the top.

            Add the remaining potatoes on top, followed by the rest of the caramelized onions, then pour the rest of the cheese mixture evenly over everything.

              Cover the baking dish with aluminum foil and bake for 40 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the potatoes are tender and the top is golden and bubbly.

                Let the bake rest for about 10 minutes before serving. Garnish with chopped parsley for a pop of color.
