French Onion Chicken Meatballs

1 pound ground chicken

1 medium onion, finely chopped

2 cloves garlic, minced

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper, to taste

1 tablespoon olive oil

1 cup beef broth

1 cup shredded Gruyère cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Onions: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and cook until they are soft and caramelized, about 10-12 minutes. Stir in the minced garlic and cook for another minute. Remove from heat and let cool slightly.

    Prepare the Meatball Mixture: In a large bowl, combine the ground chicken, sautéed onions and garlic, breadcrumbs, Parmesan cheese, egg, Worcestershire sauce, Dijon mustard, thyme, salt, and pepper. Mix until everything is well combined but do not overmix.

      Form the Meatballs: Using your hands, form the mixture into meatballs, about 1.5 inches in diameter. Place them on a parchment-lined baking sheet. You should have around 18-20 meatballs.

        Cook the Meatballs: Preheat your oven to 400°F (200°C). Bake the meatballs in the preheated oven for about 15-18 minutes or until they are cooked through and golden brown.

          Make the French Onion Sauce: While the meatballs are baking, heat the beef broth in a small saucepan over medium heat. Add any remaining onion mixture, and let it simmer for about 5 minutes to meld the flavors together.

            Combine Meatballs and Sauce: Once the meatballs are done, carefully transfer them to the pan with the simmering beef broth and onions. Gently stir to coat the meatballs in the sauce.

              Add Gruyère Cheese: Sprinkle shredded Gruyère cheese on top of the meatballs. Cover the saucepan and let it cook for another 5 minutes, or until the cheese has melted.

                Serve: Garnish with freshly chopped parsley and serve hot! These meatballs are perfect as an appetizer or over a bed of mashed potatoes or pasta.
