1 cup cottage cheese (low or full-fat, as desired)

6 large eggs

1 cup fresh spinach, chopped

1/2 cup bell peppers, diced (red or yellow for sweetness)

1/4 cup onion, finely chopped

1/2 cup shredded cheddar cheese (or cheese of choice)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

Fresh herbs (like parsley or chives), chopped (optional for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a muffin pan with cooking spray or line it with silicone muffin cups.

    Mix the Wet Ingredients: In a large mixing bowl, whisk together the cottage cheese and eggs until well combined. The mixture should be smooth but slightly lumpy due to the cottage cheese.

      Add Vegetables: Stir in the chopped spinach, diced bell peppers, and onion. Mix well to ensure the veggies are evenly distributed throughout the egg mixture.

        Seasoning: Add the garlic powder, onion powder, salt, and pepper to the mixture. Adjust the seasoning to your taste.

          Cheese It Up: Fold in the shredded cheddar cheese, allowing it to distribute evenly throughout the mixture.

            Fill the Muffin Cups: Pour the egg mixture evenly into the prepared muffin cups, filling each to about 3/4 full to allow for rising during baking.

              Bake: Place the muffin pan in the preheated oven and bake for 20-25 minutes, or until the muffins are puffed and a toothpick inserted into the center comes out clean.
