6 large eggs

1 cup cottage cheese (preferably small curd)

1 cup fresh spinach, chopped (or any leafy greens of your choice)

1 cup bell peppers, diced (red, yellow, or a mix for color)

1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Olive oil or non-stick spray for greasing the muffin tin

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with olive oil or non-stick spray.

    Combine Ingredients: In a large mixing bowl, whisk together the eggs until well combined. Add the cottage cheese, chopped spinach, diced bell peppers, shredded cheese, green onions, garlic powder, onion powder, salt, and pepper. Stir until all ingredients are evenly mixed.

      Fill Muffin Tin: Carefully pour the egg mixture into each cup of the prepared muffin tin, filling them about 3/4 full. The muffins will puff up, so be sure not to overfill.

        Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are set and lightly golden on top.

          Cool and Serve: Remove the muffin tin from the oven and allow the muffins to cool for about 5 minutes. Gently run a knife around the edges to help release them. Pop the muffins out and serve warm, or let them cool completely before storing.
