½ cup granulated sugar

½ cup brown sugar, packed

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

1 large egg

½ cup unsalted butter, melted and slightly cooled

¾ cup milk (any type)

1 tsp vanilla extract

1 large apple (such as Granny Smith or Honeycrisp), peeled and diced

Optional: ½ cup chopped walnuts or pecans

Optional: Extra cinnamon sugar for topping (1 tbsp sugar mixed with ½ tsp cinnamon)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.

      Combine Wet Ingredients: In a separate bowl, beat the egg. Then, add the melted butter, milk, and vanilla extract, stirring until smooth and combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are fine.

          Fold in Apples and Nuts: Gently fold in the diced apple and, if using, the chopped walnuts or pecans. Make sure the apple is evenly distributed throughout the batter.

            Fill Muffin Tin: Using a spoon or an ice cream scoop, fill each muffin cup about ¾ full with the batter. If desired, sprinkle the tops with the cinnamon sugar mixture for an extra sweet crunch.
