2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or make your own by mixing milk with vinegar/lemon juice)

1 large egg

2 tablespoons unsalted butter, melted (plus extra for cooking)

1 teaspoon vanilla extract

Instructions
 

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until combined.

    Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until well mixed.

      Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold with a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are okay—this will ensure your pancakes stay fluffy!
