1 cup buttermilk (room temperature)

1 large egg (room temperature)

2 tablespoons unsalted butter, melted (plus more for cooking)

1 teaspoon vanilla extract

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    In a separate bowl, mix together the buttermilk, egg, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients, and gently fold with a spatula. Be careful not to overmix; it’s okay if there are a few lumps. The key to fluffy pancakes is a gentle touch!

        Let the batter rest for about 5-10 minutes. This helps to create those fluffy pockets!

          Heat a non-stick skillet or griddle over medium heat and add a small pat of butter, swirling it around to coat the surface.
