Ingredients

1 cup cottage cheese

2 ripe bananas, mashed

3 large eggs

1 cup rolled oats

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

Pinch of salt

1 tablespoon honey or maple syrup (optional for extra sweetness)

Cooking oil or butter for the skillet

Fresh banana slices and maple syrup for serving

Instructions

Blend the Base: In a blender or food processor, combine the cottage cheese, mashed bananas, eggs, vanilla extract, and honey (if using). Blend until smooth and creamy.

Mix Dry Ingredients: In a large mixing bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.

Combine Mixtures: Pour the blended wet ingredients into the bowl with the dry ingredients. Stir gently until just combined. Let the batter sit for about 5 minutes to thicken slightly.

Preheat the Skillet: Heat a non-stick skillet over medium heat and lightly grease with cooking oil or butter.

Cook Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 3-4 minutes or until bubbles begin to form on the surface. Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown.

Keep Warm: Transfer pancakes to a plate and keep warm while cooking the remaining batter.

Serve: Stack pancakes on plates and top with fresh banana slices and a drizzle of maple syrup.
