Ingredients

2 ripe bananas, mashed

1 cup natural peanut butter (smooth or crunchy)

3 large eggs

1/3 cup honey or maple syrup (adjust to taste)

1 tsp vanilla extract

1 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon (optional)

1/2 cup dark chocolate chips or chopped nuts (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with coconut oil or non-stick spray.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, peanut butter, eggs, honey (or maple syrup), and vanilla extract. Use a whisk or a fork to blend everything together until smooth.

Add Dry Ingredients: Now, add the baking soda, salt, and cinnamon (if using) to the wet mixture. Stir until just combined. Be careful not to overmix.

Incorporate Chocolate Chips/Nuts: If you’re adding chocolate chips or nuts, fold them into the batter gently.

Fill Muffin Liners: Using a spoon or a cookie scoop, fill each muffin liner about 3/4 full with the muffin batter.

Bake: Place the muffin tin in the preheated oven and bake for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Enjoy: Once baked, remove the muffins from the oven and let them cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!
