10 ounces fresh spinach leaves, thoroughly washed

2 tablespoons sesame oil

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 teaspoon sugar (or honey for a sweeter taste)

1 garlic clove, minced

1 teaspoon grated ginger

2 tablespoons toasted sesame seeds

1 tablespoon gochugaru (Korean red pepper flakes) or to taste

3 green onions, finely sliced

Blanch the Spinach: Bring a pot of water to a boil. Once boiling, add the spinach leaves. Blanch them for about 30 seconds until they wilt. Remove the spinach and immediately transfer it to a bowl of ice water to stop the cooking. Let sit for 1-2 minutes, then drain and squeeze out excess water.
