Fire-Roasted Tomato Basil Soup

4 cups ripe tomatoes, halved

1 cup red bell peppers, halved and seeded

1 medium onion, quartered

4 cloves garlic, unpeeled

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

2 cups vegetable broth (or chicken broth)

1 teaspoon sugar (optional, to balance acidity)

1 cup fresh basil leaves, plus extra for garnish

½ cup heavy cream (optional for creaminess)

Instructions
 

Roast the Vegetables: Preheat your grill or oven broiler to high. Place the halved tomatoes, red bell peppers, onion quarters, and unpeeled garlic on a large baking sheet. Drizzle with olive oil, and sprinkle with salt and black pepper. Roast for about 20-25 minutes, or until the vegetables are charred and tender. If using a grill, be sure to turn the vegetables occasionally for even charring.

    Cool & Peel: Remove the roasted vegetables from the grill/oven and let them cool slightly. Peel the garlic cloves once they are cool enough to handle. The skins should come off easily.

      Blend the Soup: In a blender, combine the roasted tomatoes, bell peppers, onions, peeled garlic, and vegetable broth. Add the sugar if desired. Blend until smooth. For a chunkier texture, blend partially, leaving some small pieces.

        Cook the Base: In a large pot over medium heat, pour the blended mixture. Bring it to a gentle simmer and cook for about 10 minutes, stirring occasionally. This will help meld the flavors.

          Add Basil: Stir in the fresh basil leaves and let the soup simmer for an additional 5 minutes. Taste and adjust seasoning if necessary.

            Creamy Option: If you’d like your soup to be creamy, stir in the heavy cream just before serving. Heat through but do not boil.

              Serve: Ladle the soup into bowls, garnish with additional fresh basil leaves, and drizzle with a bit of olive oil for extra flavor. Serve with crusty bread or grilled cheese for a comforting meal.
