500g chicken breast, sliced into bite-sized pieces

2 tablespoons soy sauce

1 tablespoon sriracha (add more for extra heat)

1 tablespoon sesame oil

1 tablespoon cornstarch

Salt and pepper to taste

1 tablespoon vegetable oil (for frying)

For the Ramen:

4 cups chicken broth

200g ramen noodles

1 cup bok choy, roughly chopped

1 cup shiitake mushrooms, sliced

1 carrot, julienned

2 green onions, chopped

1 tablespoon grated ginger

2 cloves garlic, minced

1 tablespoon mirin (optional)

For the Creamy Garlic Sauce:

4 cloves garlic, roasted

½ cup heavy cream

2 tablespoons mayonnaise

1 tablespoon lemon juice

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken:

    In a bowl, combine chicken, soy sauce, sriracha, sesame oil, cornstarch, salt, and pepper. Let it marinate for at least 20 minutes.

      Prepare the Creamy Garlic Sauce:

        In a small blender or food processor, combine roasted garlic, heavy cream, mayonnaise, lemon juice, salt, and pepper. Blend until smooth. Adjust seasoning to taste. Set aside.

          Cook the Chicken:

            In a large skillet over medium-high heat, heat vegetable oil. Add the marinated chicken pieces and cook until they are golden brown and cooked through, about 5-7 minutes. Remove from heat and set aside.

              Make the Ramen Broth:

                In a large pot, heat the chicken broth over medium heat. Add grated ginger, minced garlic, and mirin (if using). Bring to a simmer.
