Ingredients

2 cups elbow macaroni

4 cups broccoli florets

4 cups shredded sharp cheddar cheese

2 cups shredded mozzarella cheese

1 cup cream cheese, softened

4 cups whole milk

1/2 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon mustard powder

1/4 teaspoon cayenne pepper (optional for a kick)

Salt and black pepper to taste

1/4 cup grated Parmesan cheese (for topping)

1 teaspoon olive oil (for sautéing)

1 cup panko breadcrumbs (optional, for a crunchy topping)

Instructions

Prep the Broccoli: Lightly sauté the broccoli florets in olive oil over medium heat for about 3-5 minutes until they turn bright green and slightly tender. Remove from heat and set aside.

Prepare the Cheese Sauce: In a large mixing bowl, combine the shredded sharp cheddar, mozzarella, cream cheese, whole milk, sour cream, garlic powder, onion powder, mustard powder, cayenne pepper, salt, and black pepper. Whisk until smooth and creamy.

Combine Ingredients in Crockpot: In the crockpot, add the elbow macaroni and sautéed broccoli. Pour over the cheese sauce mixture, stirring to ensure all the macaroni and broccoli are well coated.

Cook: Cover the crockpot and set it on low for 3-4 hours or on high for 2 hours. Stir occasionally during cooking to prevent sticking, and check for doneness. The macaroni should be tender and the cheese sauce should be creamy.

Add Toppings: About 15 minutes before serving, if desired, sprinkle the grated Parmesan cheese and panko breadcrumbs on top. Replace the lid and let it cook for the remaining time to develop a slight crust.

Serve: Once cooked, give the mac and cheese a good stir, and serve hot! Enjoy your cozy, creamy autumn dish.
