2 tablespoons finely ground espresso coffee

1 tablespoon brown sugar

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon smoked paprika

1 teaspoon kosher salt

1 teaspoon freshly cracked black pepper

2 tablespoons olive oil

1 tablespoon unsalted butter

Fresh rosemary or thyme sprigs for garnish (optional)

Prep the Steaks: Start by patting the ribeye steaks dry with paper towels to remove any excess moisture. This helps achieve a better crust. Let them rest at room temperature for about 30 minutes.

    Make the Espresso Rub: In a small bowl, combine the finely ground espresso coffee, brown sugar, garlic powder, onion powder, smoked paprika, kosher salt, and cracked black pepper. Mix well until all ingredients are fully incorporated.

      Season the Steaks: Rub the espresso mix generously over both sides of each steak, ensuring an even coating. Let the steaks sit for another 15-20 minutes so the flavors can penetrate the meat.
