1 lb ground beef

1 tablespoon olive oil

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 bag (12 oz) tortilla chips

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup guacamole

1 cup sour cream

1 cup fresh pico de gallo

1 jalapeño, sliced (optional)

1/4 cup fresh cilantro, chopped (for garnish)

1 tablespoon lime juice

Instructions
 

Prepare the Beef: In a large skillet over medium heat, add olive oil. Once hot, add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.

    Season the Meat: Stir in the taco seasoning according to package directions, adding the appropriate amount of water. Mix well and simmer for about 5 minutes until thickened.

      Add Beans and Tomatoes: Mix in black beans and diced tomatoes with green chilies. Let simmer for an additional 3-4 minutes until everything is heated through and well combined.

        Layer the Nachos: Preheat your oven to 350°F (175°C). On a large baking sheet, spread half of the tortilla chips to create an even base. Top with half of the beef mixture, followed by half of the cheddar and Monterey Jack cheese.

          Build the Second Layer: Repeat the process with the remaining tortilla chips, beef mixture, and cheeses for a second layer.
