Ingredients
  

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (8 oz) tomato sauce

1 packet taco seasoning

2 cups tortilla chips, crushed

2 cups shredded cheddar cheese

1 cup sour cream

1 cup diced tomatoes

1 jalapeño, sliced (optional for heat)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large skillet, brown the ground beef over medium heat. Drain any excess fat.

      Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent.

        Stir in the black beans, corn, tomato sauce, and taco seasoning. Let it simmer for about 5 minutes.

          In a greased 9x13 inch baking dish, start the layering process.

            Layer 1: Spread half of the beef mixture evenly at the bottom of the dish.

              Layer 2: Top with half of the crushed tortilla chips.

                Layer 3: Spread half of the sour cream over the chips.

                  Layer 4: Sprinkle half of the cheddar cheese over the sour cream.

                    Repeat the layers with the remaining beef mixture, tortilla chips, sour cream, and cheese.

                      Layer 5: Add the diced tomatoes on top of the last cheese layer.

                        Layer 6: Add jalapeño slices if desired.

                          Cover the casserole with aluminum foil and bake for 25 minutes.

                            Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

                              Once done, let it cool for a few minutes before slicing.

                                Garnish with fresh cilantro before serving.
