Eggplant & Kale Healthy Pasta

8 oz whole wheat pasta (spaghetti or penne)

1 medium eggplant, diced into 1-inch cubes

2 cups fresh kale, stems removed and chopped

3 cloves garlic, minced

1 small onion, finely chopped

1 can (14.5 oz) diced tomatoes, drained

2 tbsp olive oil

1 tsp smoked paprika

1 tsp dried oregano

Salt and pepper, to taste

½ cup grated Parmesan cheese (optional for serving)

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the whole wheat pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes until softened. Then add the minced garlic and diced eggplant. Sauté for about 5-7 minutes, stirring occasionally, until the eggplant is tender and slightly golden.

      Add Tomatoes and Kale: Stir in the drained diced tomatoes, smoked paprika, dried oregano, and kale. Cook for another 3-5 minutes until the kale has wilted down.

        Combine with Pasta: Add the cooked pasta to the skillet with the vegetable mixture. If the pasta seems dry, gradually stir in reserved pasta water until desired consistency is reached. Season with salt and pepper to taste.

          Serve: Plate the pasta, topping each portion with a sprinkle of grated Parmesan cheese (if using) and fresh basil leaves for garnish.
