Ingredients

For the Hash Browns:

2 large russet potatoes, peeled and grated

1/2 small onion, finely chopped

1 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons vegetable oil

For the Bacon Gravy:

4 strips of bacon, chopped

2 tablespoons all-purpose flour

1 cup milk (whole or 2%)

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

Salt to taste

2 large eggs

Fresh parsley for garnish (optional)

Instructions

Prepare the Hash Browns:

    - Place the grated potatoes in a clean kitchen towel or cheesecloth, twist, and squeeze out as much moisture as possible.

      - In a mixing bowl, combine the grated potatoes, chopped onion, salt, and pepper.

        Cook the Hash Browns:

          - Heat the vegetable oil in a large skillet over medium-high heat.

            - Once the oil is hot, add the potato mixture, pressing it down evenly into the pan.

              - Cook for about 5-7 minutes on one side until golden and crispy. Flip and cook the other side for another 5-7 minutes. Remove from the skillet and let it drain on paper towels.

                Make the Bacon Gravy:

                  - In the same skillet, add the chopped bacon and cook over medium heat until crispy. Remove the bacon with a slotted spoon, leaving the fat in the pan.

                    - Sprinkle the flour into the bacon fat, whisking continuously for about 1 minute to make a roux.

                      - Gradually add the milk while whisking until smooth. Cook until the gravy thickens, about 3-5 minutes.

                        - Stir in the cooked bacon, garlic powder, black pepper, and salt to taste. Keep warm.

                          Cook the Eggs:

                            - In a separate non-stick skillet, fry the eggs sunny-side up or to your desired doneness.

                              Assemble the Dish:

                                - Place the crispy hash browns on serving plates, top each with a fried egg, and generously ladle the bacon gravy over everything.

                                  - Garnish with fresh parsley if desired.

                                    Serve Immediately:

                                      - Enjoy your hearty and flavorful meal that combines crunchy hash browns, rich gravy, and perfectly cooked eggs!
