6 large eggs

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1/4 cup finely chopped red onion

1/4 cup finely chopped celery

1 tablespoon fresh dill (or 1 teaspoon dried dill)

Salt and pepper to taste

8 slices of bread (whole grain, sourdough, or your choice)

Lettuce leaves or arugula for serving

Optional: Sliced tomatoes or pickles for garnish

Hard Boil the Eggs: Place the eggs in a pot and cover with water. Bring to a boil over medium-high heat. Once boiling, cover the pot and remove it from the heat. Let the eggs sit for 10-12 minutes. Then transfer the eggs to an ice bath to cool for about 5 minutes.

    Prepare the Egg Salad Mixture: Once the eggs are cool, peel them and chop them into small pieces. In a large mixing bowl, combine the chopped eggs, mayonnaise, Dijon mustard, apple cider vinegar, red onion, celery, and dill. Mix gently until well combined.

      Season to Taste: Add salt and pepper to taste. If you prefer a creamier texture, you can add more mayonnaise or a splash of milk to reach your desired consistency.

        Assemble the Sandwiches: Take two slices of your chosen bread and place a generous scoop of egg salad on one slice. Top with lettuce leaves or arugula, and if desired, add sliced tomatoes or pickles. Place the other slice of bread on top.
