Ingredients

6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 cup cooked sausage (crumbled, any type you prefer)

1 small onion (finely chopped)

1 bell pepper (diced, optional)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh herbs (optional, such as chives or parsley for garnish)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or line with muffin liners.

Cook Sausage: In a skillet over medium heat, cook the crumbled sausage until browned. If using fresh onion and bell pepper, add them to the skillet and sauté until softened (about 3-5 minutes). Remove from heat and set aside.

Prepare Egg Mixture: In a large mixing bowl, whisk together the eggs and milk until well combined. Add the garlic powder, onion powder, salt, and pepper; mix until incorporated.

Combine Ingredients: Stir in the cooked sausage mixture and the shredded cheddar cheese into the egg mixture. Make sure everything is evenly distributed.

Fill Muffin Tin: Pour the egg mixture into each muffin cup, filling them about ¾ full. If desired, sprinkle a bit of extra cheddar cheese on top of each muffin.

Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the muffins are puffed up and a toothpick inserted in the middle comes out clean.

Cool and Serve: Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack. Garnish with fresh herbs if desired.

Enjoy: Serve warm, or store them in an airtight container in the fridge for meal prep. Reheat in the microwave as needed.
