8 oz linguine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, packed

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Linguine: In a large pot, bring salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the linguine and set aside.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and opaque. Season with salt, pepper, and red pepper flakes. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they begin to soften. Stir in the spinach and cook until wilted.

        Combine Ingredients: Reduce the heat to low and add the heavy cream to the skillet, stirring to combine. Gradually add the grated Parmesan cheese, mixing until melted and creamy. If the sauce is too thick, add some of the reserved pasta water until desired consistency is reached.

          Mix in Shrimp and Pasta: Return the cooked shrimp to the skillet, followed by the linguine. Toss everything together until well coated in the sauce.

            Serve: Plate your Tuscan shrimp linguine and garnish with fresh basil leaves. Enjoy your dish hot with an extra sprinkle of Parmesan if desired!
