Ingredients

4 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, chopped

1 cup mozzarella cheese, shredded

2 cloves garlic, minced

1/4 cup balsamic vinegar

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Toothpicks or kitchen twine

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Filling: In a medium bowl, combine the halved cherry tomatoes, chopped basil, mozzarella cheese, minced garlic, balsamic vinegar, olive oil, Italian seasoning, salt, and pepper. Mix well to ensure the ingredients are thoroughly combined.

Prepare the Chicken: Place each chicken breast between two pieces of plastic wrap. Using a meat mallet or rolling pin, gently pound the chicken until it's about 1/2 inch thick. This will help the chicken cook evenly and allow for easy stuffing.

Stuff the Chicken: Take a portion of the tomato filling and spoon it onto one side of each chicken breast. Gently fold the other side over the filling. Secure the chicken with toothpicks or tie it with kitchen twine to hold the stuffing inside.

Sear the Chicken: In a large oven-safe skillet, heat a drizzle of olive oil over medium-high heat. Add the stuffed chicken breasts and sear for about 4-5 minutes on each side until golden brown.

Bake the Chicken: Transfer the skillet to the preheated oven and bake for an additional 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

Serve: Once cooked, remove the chicken from the oven and let it rest for 5 minutes. Cut off the toothpicks or twine, slice the chicken, and serve with a sprinkle of fresh basil and a drizzle of remaining balsamic vinegar!
