1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, chopped (any color)

1 can (14.5 oz) diced tomatoes (with juice)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

2 cups beef broth

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (for topping)

Fresh cilantro (for garnish, optional)

Instructions
 

In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess grease if necessary.

    Add the diced onion, garlic, and bell pepper to the pot. Sauté until the vegetables are soft, approximately 4-5 minutes.

      Stir in the diced tomatoes (with juice), kidney beans, corn, and beef broth. Mix well.

        Season the mixture with chili powder, cumin, smoked paprika, salt, and pepper. Bring to a boil.

          Once boiling, reduce heat to low and let simmer for about 30 minutes, stirring occasionally. This will allow the flavors to meld beautifully.

            Taste and adjust seasoning if necessary.

              When ready to serve, ladle into bowls and sprinkle with shredded cheddar cheese and garnish with fresh cilantro if desired.
