Ingredients
  

1 cup stone-ground grits

4 cups chicken broth (or water)

1 cup shredded sharp cheddar cheese

2 tablespoons unsalted butter

1 pound large shrimp, peeled and deveined

4 slices bacon, chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (adjust to taste)

2 green onions, sliced

Salt and pepper to taste

Lemon wedges for garnish (optional)

Instructions
 

Cook the Grits: In a medium saucepan, bring the chicken broth to a boil. Stir in the grits, reduce the heat to low, and let it simmer, stirring occasionally, until thickened (about 15-20 minutes). If the grits get too thick, add a bit more broth or water to achieve your desired consistency.

    Add Cheese: Once the grits are cooked, remove them from the heat. Stir in the butter and shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste. Cover to keep warm.

      Prepare the Shrimp: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon using a slotted spoon and let it drain on paper towels, leaving the bacon fat in the skillet.

        Cook the Shrimp: In the same skillet with the bacon fat, add the minced garlic, smoked paprika, and red pepper flakes. Sauté for about 1 minute until fragrant. Add the shrimp, and cook for 2-3 minutes on each side or until they turn pink and opaque.

          Combine: Reduce the heat to low, add the cooked bacon back to the skillet, then gently fold in the cooked grits until well combined. If needed, adjust seasoning with more salt, pepper, or additional red pepper flakes.

            Serve: Spoon the shrimp and grits mixture onto plates. Garnish with sliced green onions and serve with lemon wedges on the side.
