6 large eggs

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup milk (whole or low-fat)

1 small onion, finely chopped

1 clove garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for a kick)

1 tablespoon olive oil

Fresh parsley or dill, for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large bowl, whisk together the eggs, milk, salt, black pepper, and red pepper flakes until well combined and frothy.

      In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

        Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and allow to cool slightly.

          Stir the spinach mixture into the egg mixture, followed by the crumbled feta cheese. Mix until combined.

            Pour the egg mixture evenly into a greased 12-cup muffin tin or individual ramekins. The mixture should fill each cup about 2/3 full.

              Bake in the preheated oven for 15-20 minutes, or until the omelets are set in the middle and lightly golden on top.

                Remove from the oven and let cool for a few minutes. Use a butter knife around the edges of each omelet to pop them out.

                  Serve warm, garnished with fresh parsley or dill if desired.
