4 boneless pork chops (about 1-inch thick)

Salt and pepper, to taste

1 tablespoon olive oil

1 small onion, sliced

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

1 cup chicken broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Pork Chops: Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.

    Sear the Chops: In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for 4-5 minutes on each side until they are golden brown. Remove from the skillet and set aside.

      Sauté the Onions: In the same skillet, reduce the heat to medium and add the sliced onions. Sauté until they are translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Make the Sauce: Stir in the dried thyme, paprika, chicken broth, heavy cream, Dijon mustard, and Worcestershire sauce. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet.

          Return the Chops: Once the sauce is simmering, return the pork chops to the skillet. Spoon some of the sauce over the chops. Cover the skillet and reduce the heat to low, cooking for another 10-15 minutes, or until the pork is cooked through (internal temperature of 145°F).

            Serve: Once done, transfer the pork chops to a serving platter and spoon the creamy onion sauce over the top. Garnish with fresh parsley before serving.
