Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (any type)

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Extra butter or oil for the pan

Instructions

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Combine Wet Ingredients: In another bowl, mix the milk, egg, melted butter, and vanilla extract until fully blended.

Combine Wet and Dry: Pour the wet ingredients into the dry ingredients. Gently stir with a spatula or wooden spoon until just combined. It's okay if the batter is slightly lumpy – don't overmix!

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Add a little butter or oil to coat the surface.

Cook the Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip and Cook: Carefully flip the pancakes and cook for another 1-2 minutes on the other side, until golden brown.

Keep Warm: If cooking multiple batches, keep finished pancakes warm in a low oven (around 200°F/95°C) while you finish the rest of the batter.

Serve: Serve warm with maple syrup, fresh fruit, or your favorite toppings!
