4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 lemon (juice and zest)

2 teaspoons garlic powder

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into half-moons

1 red bell pepper, sliced

1 cup green beans, trimmed

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Marinate the Chicken: In a small bowl, mix together the olive oil, lemon juice, lemon zest, garlic powder, oregano, paprika, salt, and pepper. Rub this mixture onto the chicken breasts, ensuring they are well coated. Allow to marinate for at least 15 minutes while you prepare the veggies.

      Prepare the Veggies: In a large bowl, combine the cherry tomatoes, zucchini, red bell pepper, and green beans. Drizzle with a bit of olive oil (1 tablespoon), and season with a pinch of salt and pepper. Toss to coat evenly.
