12 corn tortillas

1 pound ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (16 oz) diced tomatoes (with green chilies for extra flavor)

2 tablespoons taco seasoning

1 cup salsa

2 cups shredded cheddar cheese

1 cup sour cream

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for topping)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet, brown the ground beef or turkey over medium heat. Add the diced onion and minced garlic, cooking until the onion is translucent (about 5 minutes). Drain any excess fat.

      Mix Ingredients: Stir in the black beans, corn, diced tomatoes, taco seasoning, and salsa. Let it simmer for about 5 minutes, allowing the flavors to meld together.

        Layer the Lasagna:

          - Spread a thin layer of the meat mixture on the bottom of a 9x13-inch baking dish.

            - Place 3 corn tortillas on top of the meat mixture.

              - Spread some sour cream over the tortillas, followed by a layer of cheese.

                - Repeat these layers (meat mixture, tortillas, sour cream, cheese) until all ingredients are used, finishing with a final layer of cheese on top.

                  Bake: Cover the lasagna with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                    Serve: Let it cool for 5 minutes before serving. Garnish with fresh cilantro and sliced jalapeños, if desired.
