Ingredients

4 large russet potatoes

1 cup shredded cheddar cheese

1 cup cooked bacon, crumbled

1 medium onion, diced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

½ cup sour cream (for serving)

2 green onions, sliced (for garnish)

Instructions

Prepare the Potatoes: Preheat your oven to 425°F (220°C). Wash and peel the russet potatoes, then cut them into thick fries. Pat them dry with paper towels.

Season the Fries: In a large bowl, toss the cut fries with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

Bake the Fries: Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for 30-35 minutes, flipping halfway through, until they are golden brown and crispy.

Cook the Onions: While the fries are baking, heat a skillet over medium heat. Add the diced onions and a drizzle of olive oil. Sauté until the onions are soft and caramelized, about 7-10 minutes.

Assemble the Loaded Fries: Once the fries are done baking, remove them from the oven. Sprinkle the crumbled bacon over the fries, then top with the shredded cheddar cheese. Return the loaded fries to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serve: Remove the fries from the oven and top with the caramelized onions. Serve immediately with a dollop of sour cream and a sprinkle of sliced green onions for freshness.
