10 ounces fresh spinach, washed and trimmed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 tablespoon sugar (or honey)

2 cloves garlic, minced

1 teaspoon sesame seeds, toasted

1 green onion, finely chopped

A pinch of red pepper flakes (optional for heat)

Instructions
 

Blanch the Spinach: Bring a pot of water to a boil. Add the spinach and blanch for about 30 seconds until just wilted. Immediately transfer the spinach to an ice bath to stop the cooking process. Drain well and gently squeeze out any excess water.

    Make the Dressing: In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, sugar (or honey), minced garlic, and red pepper flakes (if using) until well combined.

      Combine: In a large mixing bowl, add the blanched spinach. Pour the dressing over the spinach and gently toss to ensure the leaves are fully coated.

        Finish the Salad: Sprinkle the toasted sesame seeds and chopped green onion over the spinach salad. Toss lightly to combine once more.

          Serve: Transfer the salad to a serving dish or bowls. Enjoy it immediately or let it chill in the fridge for about 15 minutes to enhance the flavors.
