2 lbs boneless, skinless chicken breasts

2 cups chicken broth

1 cup cream of chicken soup (or homemade)

1 medium onion, diced

2 carrots, sliced

2 stalks celery, diced

1 cup frozen peas

1 teaspoon garlic powder

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 can (16 oz) refrigerated biscuit dough (or homemade dumplings)

Fresh parsley (for garnish)

Instructions
 

Prepare the Chicken: Place the boneless chicken breasts at the bottom of the crockpot.

    Mix the Base: In a separate bowl, combine chicken broth, cream of chicken soup, diced onion, sliced carrots, diced celery, garlic powder, thyme, rosemary, salt, and pepper. Stir until well mixed.

      Combine Ingredients: Pour the mixture over the chicken in the crockpot. Ensure that the chicken is covered with the broth mixture.

        Slow Cook: Cover the crockpot and cook on low for 6-7 hours or on high for 4-5 hours, until the chicken is cooked through and tender.

          Shred the Chicken: Once cooked, use two forks to shred the chicken right in the crockpot. Stir to combine the shredded chicken with the broth and veggies.

            Add Dumplings: Cut the biscuit dough into quarters (or desired size) and drop them on top of the chicken mixture in the crockpot. Cover and cook on high for an additional 30 minutes, or until the dumplings have puffed up and are cooked through.

              Finish & Serve: Stir gently to incorporate the dumplings into the dish. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
