2 cups cooked, shredded chicken (rotisserie chicken works great!)

1 cup shredded cheese (cheddar or a Mexican blend)

1 can (10 oz) enchilada sauce (red or green, based on preference)

8 small flour or corn tortillas

1 small onion, finely chopped

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

1/2 cup sour cream (optional, for serving)

Fresh cilantro or green onions, chopped (for garnish)

Instructions
 

Prepare the Filling:

    - In a skillet over medium heat, add the olive oil and chopped onion. Sauté for about 3-4 minutes until the onion is soft and translucent.

      - In a mixing bowl, combine the shredded chicken, half of the shredded cheese, garlic powder, cumin, chili powder, and sautéed onion. Mix until well combined.

        Assemble the Enchiladas:

          - Preheat your oven to 350°F (175°C).

            - Pour about 1/3 of the enchilada sauce into the bottom of a 9x13 inch baking dish, spreading it evenly.

              - Take a tortilla and spoon about 1/4 cup of the chicken mixture into the center of the tortilla. Roll it up and place it seam-side down in the baking dish. Repeat this process for all tortillas.

                Top with Sauce and Cheese:

                  - Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top, ensuring all tortillas are covered.

                    - Sprinkle the remaining shredded cheese evenly over the sauced enchiladas.

                      Bake:

                        - Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

                          - Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbling and starting to brown lightly.

                            Serve:

                              - Remove from the oven and let cool for a few minutes before serving.

                                - Top with sour cream (if desired) and sprinkle fresh cilantro or green onions on top for a pop of color and freshness.
