Easy Chicken Enchiladas

2 cups cooked chicken, shredded

1 cup shredded cheddar cheese (divided)

1 cup sour cream

1 can (10 oz) red enchilada sauce

8 small flour tortillas

1/2 cup diced onion

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon chili powder

Fresh cilantro for garnish

Sliced jalapeños for topping (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a skillet, heat the olive oil over medium heat. Add diced onions and sauté until they turn translucent, about 3-4 minutes.

      In a large mixing bowl, combine shredded chicken, half of the shredded cheddar cheese (1/2 cup), sour cream, sautéed onions, garlic powder, ground cumin, and chili powder. Mix well until all ingredients are fully combined.

        Pour a thin layer of enchilada sauce at the bottom of a 9x13 inch baking dish.

          Take a tortilla, scoop about 1/4 cup of the chicken mixture, and place it in the center. Roll it tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas.

            Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top, ensuring each enchilada is coated. Sprinkle the remaining shredded cheddar cheese on top.

              Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

                Remove from the oven and let it cool slightly. Garnish with fresh cilantro and, if desired, sliced jalapeños before serving.
