Easy Chicken and Rice Casserole

2 cups cooked white rice (can use brown rice for a healthier option)

1 pound boneless, skinless chicken breasts, cubed

1 can (10.5 oz) cream of chicken soup

1 cup milk

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1 cup shredded cheddar cheese

½ cup breadcrumbs (optional for added crunch)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven: Set your oven to 350°F (175°C).

    Prepare the chicken: In a large mixing bowl, combine the cubed chicken with garlic powder, onion powder, thyme, salt, and pepper. Make sure the chicken is evenly coated with the seasonings.

      Mix the casserole base: In another bowl, whisk together the cream of chicken soup and milk until smooth.

        Combine ingredients: Add the cooked rice, mixed vegetables, and seasoned chicken to the soup mixture. Stir everything together until well combined.

          Transfer to a baking dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly across the bottom.

            Add cheese and breadcrumbs: Sprinkle shredded cheddar cheese on top. If you like a crunchy topping, you can also add a layer of breadcrumbs over the cheese.

              Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the chicken is cooked through and the toppings are golden and bubbly.

                Garnish & serve: Once done, remove from the oven and let it sit for 5 minutes. Garnish with fresh parsley if desired before serving.
